Excitotoxins?? Are you a label reader?

Looking up "Excitotoxicity" on Wikipedia it gives the definition that Excitotoxicity is the pathological process by which nerve cells are damaged and killed by glutamate and similar substances. Have you heard or do you know what excitotoxins are? Have you ever noticed that when eating out at a Chinese restaurant that sometimes on their menu you see that they advertise they don't use MonoSodium Glutamate (MSG). Russell L. Blaylock has a book out "Excitotoxins: The Taste that Kills." In this book you will learn just how bad MSG is and how MSG pierces the blood-brain barrier and over stimulates the neurons of a brain to a deadly degree.
Check those labels for hidden MSG! Another reason to stay away from processed foods. The FDA does not recognize the immediate or long term danger of verious excitotxins being added to our food supply, such as MSG, hydrolyzed vegetable protein , and aspartame. We need to educate ourselves of the danger MSG and how it is disguised in forms such as natural flavoring, spices, yeast extract, textured protein, soy protein extract. Liquid forms of excitotoxins, as occurs in soups, gravies and diet soft drinks are more toxic than that added to solid foods because they are rapidly absorbed and reach higher blood levels.
There is solid research that has shown that ADD, ADHD, Dyslexia, Brain tumors, Depression, and rage disorder and paranoia have been linked to MSG and Aspartame.
On Dr Blaylock's website it talks about high consumption of aspartame adds an additional cardiac muscle toxin, methanol.

Carrot Corn Salsa Raw Food Recipe








Carrot Corn Salsa

This can serve as a dip or salsa.

Ingredients:

  • 3 Carrots
  • 1 Garlic Clove
  • ¼ Cup Red Onion
  • ¼ Cup Chopped Green Onion
  • ½ Red Bell Pepper
  • 1 Tbsp. Lemon Juice
  • 1 tsp Olive Oil
  • ¼ Cup Chopped Cilantro
  • 1 Tbsp. Nama Shoyu or ½ tsp Sea Salt
  • ½ tsp Cumin
  • 1 to 2 Ears of corn cut from cob
Directions
  1. Process carrots, garlic, red and green onions, peppers, lemon juice and cilantro in food processor until fine.

  2. Add the cumin, olive oil and nama shoyu or salt.

  3. Pour into a bowl and add the corn.

  4. Adjust seasonings to taste.

  5. Any cracker is great with this salsa.

Chipotle Kale Chips Raw Food Snack

This is one of my favorite dehydrator recipes ever!!!
Berry Bliss really came up with these great  kale chips. If your in Whitefish on Tuesdays you can find Berry Bliss at the Farmers Market there with kale chips, burgers, macaroons. A different menu each week.

When I first heard of kale chips I questioned what was the rave about these chips. I finally tried them and am I ever glad that I did. Remember kale is rich in calcium, lutein, iron, and vitamins A, C, and K. Kale is rich in Vitamin C and did I mention fiber rich. The high fiber content in kale helps to reduce high cholesterol levels and thus helps to prevent atherosclerosis. Kale is a very good source of the trace element, manganese.
























How to make kale chips!

Kale Chips
2 bunches kale, de-stemmed
1 tablespoon himalayan salt
1/2 recipe cheese
1-2 teaspoons chipotle (to taste) (this may imbalance pitta constitution types)
you may want to try other herbs or spices

Cashew Cheese:
2 cups cashews (soaked for two hours)(I use only 1 cup)
1/4 cup nutritional yeast
1/4 cup lemon juice (fresh pressed is the best)
3 cloves of garlic or 1 teaspoon hing (asafoetida)
1 teaspoon cumin
1 teaspoon coriander
1/4 cup water

De-stem kale and tear into chip sized pieces (keep in mind that kale shrinks a lot). Massage salt into kale so that it starts to release moisture, this also makes the kale easier to digest. Then let the kale relax while you make your cashew cheese.

For the cashew cheese, place all ingredients in a Vita-Mix or high speed blender and process until you have a smooth, creamy texture. Add more water as needed.

Add cashew cheese to wilted kale and massage! Now, your chips are ready to go into the dehydrator! Dehydrate at 105 degrees overnight. This creates a scrumptious, buttery kale chip!
Experiment with different spices, try a BBQ rub instead of chipotle. Have fun!

Ani's RAW FOOD Essentials Book Review






















Just received this book of Ani's to review from Da Capo Press. She did it again and came out with a outstanding raw food cookbook. Whether a beginner or expert this book has it all.

In this book she teaches you about the tools needed, how to shop, and how to use the book in part one called the basics. She also covers the raw basics and techniques such as dehydration, flatbreads, soaking and sprouting, fermenting and pickling, and substitutions. Part two you will learn about smoothies, mylks and shakes, elixirs, sun teas, cultured drinks. Then she has breakfast cereal, crepes, pancakes, bacon, scrambles, quiche, toast and biscuits, jams and butters. The next section has snacks and accompaniments such as cheezes, chips, crackers, vegetables, seasoned nuts, pickled vegetables. Then her soup, salads, dressings, wraps, sandwiches and burgers, pizza and noodles, dumplings and rice. And everybody's favorites desserts which includes pies, cakes, ice kream, sweet sauces, cookies. She has a great menu for breakfast, lunch and dinner and foods to go. I can't wait to learn more about the food to go. Ani has a great resource chapter in the back of the book. And of course she included a raw for dogs chapter.

I'm really excited about this book and can't wait to try recipes. This book is one of those books that will teach you so much and great to be in your raw food kitchen.

Pesto Pepper Crackers Raw Recipe
















1 1/2 cups sunflower seeds (sprouted)
1 1/2 cups pumpkin seeds (sprouted)
10 pitted dates
1 Tbsp lemon juice
2 jalapenos, seeded
1 cup fresh basil
3 garlic cloves
1 teaspoon celtic salt
Take and sprout your seeds a few days ahead of time. Then grind your flaxseeds in a coffee grinder. Process everything except flaxseeds in food processor. Spread on parchment paper and dehydrate until dry.
You can add sun dried tomatoes to add a different flavor.

Just received this book "The 30 Minute Vegan" by Mark Reinfeld and Jennifer Murray from Da Capo Press to review.

Mark Reinfeld, is the founding chef for the "Blooming Lotus Restaurant" and has been preparing vegan and live food cuisine for more than fifteen years. His Vegan Fusion World Cuisine has won nine international award, including a Gourmad Award for the "Best Vegetarian Cookbook in the USA,"

Jennifer Murray is the coauthor of The Complete Idiot's Guide to Eating Raw. She teaches classes internationally, demonstrating vegan cooking, baking, and raw food preparation. Both Reinfeld and Murray live in Kaua'i, Hawaii.

This book has cooked recipes and also has several raw choices. In looking through this cookbook I found that it is one of those cookbooks I love it has normal ingredients without long lists of ingredients. I really love that! I can not say enough good things about this book. Remember the title is 30 minute vegan and that is a plus for our busy lifestyles. No excuses, we can cook healthy and not take a lot of time to prepare. There are over 175 recipes in this book that are quick, delicious, and healthy for everyday cooking. It's easy to find the raw food recipes with the heart above each raw recipe.
I just had to start trying recipes and tried Vanilla Sesame Bonbons which everyone loves. I see a whole long list of more recipes to try.

Benefits of Drinking Water

Everyone has heard how important it is to drink water.

I notice my body cries for water! Every cell in every living thing, whether plants or people, contains a nutrient fluid that is mostly water. Water acts as a solvent, transporting, combining, and chemically breaking down these substances. Our organs are made of cells. Drinking water eliminates waste, toxins and helps our body maintain a proper pH balance. Drinking water helps reduce water retention, maintains muscle tone and regulates body temperature. Reduces the risk of disease and infection. Water is an essential nutrient. You need to drink water to help flush out the by products of fat breakdown and lose weight. Drinking water can help reduce hunger.

Your body is approximately 67% water by weight. If your body drops by as little as 2%, you will feel fatigued. It it drops by 10%, you will experience significant health issues. We don't drink enough water. Make a habit of drinking water. Start your day off with 1/2 to 1 quart of water to flush your digestive tract and rehydrate your system from the overnight fast. Get in the habit of carrying a water bottle with you and keep one in your car. Drink the purest available.

Water acts as a natural remedy to head your way towards achieving beautiful rich glowing skin.
Coffee, tea, juice and sodas don't count as water intake.

Remember if you have a dry mouth, your body is crying for water!

Edible Plant "Lamb's Quarters"

















Many people see Lamb's Quarter (Chenopodium album) nothing more than a common weed never knowing how tasty and nutritious it is. It is one of the most nutritious herbs you can eat. Our daughter has discovered how much she loves it. It's sweet and wonderful. We step out our door and pick for our salads!

Eat in moderation like their relative spinach that contains oxalates. Lamb's Quarter is high in protein, vitamin A, calcium, phosphorus, and potassium. Lamb's Quarter is also a mild laxative.

Hallelujah Acres George Malkmus

About 12 years ago I was able to attend a Health Crusade and one of the speakers was George Malkmus from Hallelujah Acres. He gave his testimony about his colon cancer in 1976 and the hallelujah diet. He chose the Genesis 1:29 diet of uncooked fruits and vegetables and carrot juice. One year later his cancer was gone and many other ailments also. His message was titled "You Don't Have to be Sick!" He worked with Dr. Ann Wigmore in Boston. Hallelujah Acres have many healthy weight loss tips.

At Hallelujah Acres they have a health ministry training program. They have a health food store, cafe, and a lifestyle center located in North Carolina. 

Hallelujah Acres is a non-denominational Christian ministry that provides education, products, services, and other resources to help people everywhere understand and practice God's way to ultimate health.

In reviewing this book, I'm finding this book to be useful for a beginner or expert. It's kid friendly which is a plus for me. It covers pregnancy, breastfeeding, super foods, supporting techniques, the journey, sample menus, sprouting to name a few.
The recipes in this raw food cookbook have simple everyday ingredients that I have in my house so no long list of ingredients. I really like that idea. She goes over ingredients and tools needed in the kitchen which is only a few. It makes it easier to try any of the recipes right away. There are 150 different recipes in this book so there is a nice variety here. She shows how raw foods offer a simple way of eating and lifestyle. Some of the recipes include
Red Pepper Ketchup, Thai Pumpkin Soup, Sweet Potato Satay, Goji Pudding, Lenanese Cauliflower Crackers, Beetroot Burgers, Carob Torte, Carob Ice Cream, Zucchini Chips, Christmas Coleslaw, Janes Curry, Cilantro Pesto, Avo Pesto, Asian Dipping Sauce, Walnut Dressing, Date Chutney, Hemp Seep Hummus, Carrot Cakes, Flap Jacks, Hot Cross Buns, just to name a few of the 150 recipes offered in this book.

Raw Food Potluck

Today was our raw food potluck and it was not planned but turned out to be an Italian raw food potluck.
Raw spaghetti and meatballs, garlic bread, kale salad, green salad, brussel sprout salad, carob balls, sesame crackers and smoothies! This raw food potluck was excellent and we had great company. So fun to meet new raw foodies out there trying to stay healthy!

If you've never had raw zucchini noodles and marinara sauce you need to try it. This is a basic recipe that you could make really easy.

Cashew Cream Recipe














1 cup water
3/4 cup clean, raw cashews
8 pitted dates
1/2 teaspoon vanilla
pinch salt

Process first 3 ingredients in a blender until very smooth. Bring to a boil, then add
remaining ingredients. Reduce heat and simmer until thickened, stirring constantly.
May be served warm or cold. May also be used without heating.

Yields: 1 cup or 8 servings.

Variations: For a creamier, less rich cream, add 1/2 - 3/4 cup cooked brown rice and
process well.

Adjust water, if necessary; for a white cream substitute 1 Tbsp. honey (or white stevia) for dates.

Raw Food Recipe For Thai Cabbage Salad














This vegan raw food recipe is a easy recipe to throw together and store in separate bowls until your ready to toss and eat.

3 cups shredded Napa cabbage
1 cup shredded red cabbage
1 cup sliced baby bok choy
1 cup mung bean sprouts
1/4 cup cilantro leaves
2 tbsp sesame seeds
Chili flakes
Mix and make dressing

Dressing
1/4 cup sesame cold pressed sesame oil
1 date (pitted)
2 cloves garlic
1 tbsp sesame oil, toasted
1 jalapeno
1 tsp ginger, sliced thin
1 tsp salt
Blend in blender until smooth.

Mix dressing with salad and sprinkle with sesame seeds and chili flakes.

Alkaline Foods

The right alkaline balance is critical to good health. To see how acid or you are, you can do a simple test using pH test strips.

The body should maintain the proper alkaline-acid balance for it to be able to work properly and to contribute to achieving optimum health.

Even with a list of alkaline-acid foods, just remember that alkaline foods are mostly those that are produced naturally and most acidic foods are either machine -produced or those that imitate naturally-produced foods.

The kidneys, lungs and skin must work overtime to balance body pH toward the alkaline. They do so by borrowing alkaline minerals (calcium, magnesium, potassium) from bone and tissue.

Food Matters DVD Review

I just got done watching this amazing video "Food Matters" that was just sent to me to review. This is a must see video. Just shows how important it is to eat more raw foods! Absolutely amazing DVD.





This eye opening DVD just shows that we are eating too much of the wrong thing and not enough of the right thing. Amazing most people think that there is a pill to cure everything and 106,000 people die each year from side effects. When in doubt use nutrition first!


Doctors rarely if ever prescribe a mere diet change to heal illness. This video is very alarming and a must see. David Wolfe talked about super foods. Charlotte Gerson talked about the soil where our food is grown.


I am SO inspired and motivated after watching this DVD. I will be sharing this video with friends and family and I know I'll be watching it again.

Ultimate Guide To Your Raw Kitchen Gadgets

Here are a few items I have found useful in my kitchen while preparing my raw food.
There are several gadgets I could live without and several that make life easier!
When preparing raw food it is so useful to have some of these gadgets to prepare your dishes and presentation is a huge factor too. Just collect as you go. I didn't get everything at once. Have fun and be creative!

Blender
Blender is my most used item. I use a blender pretty much daily.

A juicer is a great tool to have in your raw food kitchen also. Fresh juice is just amazing.

Next the dehydrator another item I use a whole lot. Making crackers, I dry bananas for my husbands oatmeal since he's not raw. I make my kale chips that I'm addicted to. You have to try kale chips. I have several free vegan recipes on this blog for you to try.

Food Processor
Oh my do I use this useful tool. You can find these at thrift stores, yard sales, or search online.

Spiral Slicer
I didn't get a spiral slicer until about 4 months ago and was I surprised at how it cuts through the vegetables like butter and makes your pasta perfect!


Saladacco
My friend went to a Health Crusade years ago and I had her get me a Saladacco and I have used it for so many things. I love how it cuts veggies so thin for salads even before I was raw.

Mandoline
A mandoline is great for cutting bananas into chips, slicing zucchini for lasagna, julienning vegetables. I use mine daily most of the time.

Killer at Large DVD Review

I received this DVD called Killer at Large this week to review. This was a much needed DVD and so true and scary at the same time. I know in my household we have changed out habits over the years and got away from the junk and processed foods and we have gone to a more wholesome diet. I'm very thankful we did this for our children and ourselves. It's never too late to change your habits and diets. I will try to encourage you to make changes in your habits. It might be hard at first but for everyone it might be small changes and some can make drastic changes. You will thank yourself!!

If you didn't know obesity was a problem you will soon find out watching this DVD.

This DVD is a award-winning and explores the multi-faceted obesity epidemic facing the United States. Producer Bryan Young insists the problem is so large that, "we felt it was very important to get as many people as we can to discuss an issue that the last few Surgeons General have warned us is the biggest threat to out country today. In 2005 California Governor Schwarzenegger signed into law state legislation limiting or banning outright the sale of junk food in the school vending machines. It was terrible to watch a 12 year old girl have liposuction and have having such a struggle a 7 month period.

Healthy Green Kale

The beautiful leaves of the kale plant provide an earthy flavor and more nutritional value for fewer calories than almost any other food around. Although it can be found in markets throughout the year, it is in season from the middle of winter through the beginning of spring when it has a sweeter taste and is more widely available.
Kale is a leafy green vegetable that belongs to the Brassica family, a group of vegetables including cabbage, collards and Brussels sprouts that have gained recent widespread attention due to their health promoting, sulfur-containing phytonutrients. It is easy to grow and can grow in colder temperatures where a light frost will produce especially sweet kale leaves.
Kale provides cancer prevention and detoxification.
It's excellent source of vitamin A, C, K, B6 and manganese and a good source of dietary fiber and minerals.

Kale Chips Raw Food Fat Free


I'm really hooked on kale chips and just can't get enough of them in mouth! I really want a fat free recipe. Nuts seem to grow on me and don't leave my body. So I was playing around with this recipe the other day since I've been making the kale chip recipe every night and playing with the ingredients.
I'm playing with every flavor I can think of. Stay tuned for more flavors! I was inspired by Berry Bliss's kale chip recipe. INSANELY ADDICTIVE!



























Cheesy Kale Chips
1 med zucchini
1/8 cup olive oil (OPT)
1-3 cloves garlic
juice of 1 lemon
1/4 cup nutritional yeast
1/2 tsp paprika
1 tsp chipotle
1/2 tsp cumin
1/2 tsp coriander
1/4 cup water
Blend

2 bunches of kale
1/2 tbsp celtic salt

Massage salt into washed kale chips. Then mix cheese sauce into kale chips and dehydrate until done about 8 hours until crunchy.
