Many people see Lamb's Quarter (Chenopodium album) nothing more than a common weed never knowing how tasty and nutritious it is. It is one of the most nutritious herbs you can eat. Our daughter has discovered how much she loves it. It's sweet and wonderful. We step out our door and pick for our salads!
Eat in moderation like their relative spinach that contains oxalates. Lamb's Quarter is high in protein, vitamin A, calcium, phosphorus, and potassium. Lamb's Quarter is also a mild laxative.
