Raw Food for Real People by Rod Rotondi Raw Food Recipe

MEDITERRANEAN BURGERS WITH PESTO SAUCE
I originally created these in the form of croquettes at my first raw restaurant, Rod’s Wrap & Juice Bar. Some of my customers dubbed these my “meatballs” because they have a very meaty consistency. The rich basil-infused pesto sauce creates a wonderful aroma and tastes divine. It also makes a great dressing or dip.
Makes 6 to 8 burgers

For the Patties
1 cup walnuts
1 cup hulled sunflower seeds
2 cups sprouted lentils (see chart, page 58)
1/2 cup coarsely chopped purple cabbage
1 1/2 cups coarsely chopped celery (about 3 ribs)
1 medium lemon, peeled and quartered
1 cup sun-dried tomatoes, soaked 1 hour if not already soft
1/4 cup cold-pressed olive oil
1/2 teaspoon sea salt

For the Pesto Sauce
1 medium lemon, peeled and quartered
1 cup spinach leaves
2 cups basil leaves
1 cup walnuts
1 cup cold-pressed olive oil
1/4 cup garlic cloves (8 to 10 cloves)
1/2 bunch parsley leaves (about 3/4 cup)
1 cup soaked cashews or pine nuts (soaked 2 hours, drained, and rinsed)
1/2 tablespoon sea salt
1 cup water, plus extra if needed
Romaine lettuce leaves, rinsed and dried
Red onion slices
Tomato slices
Alfalfa sprouts

1. Grind the walnuts and sunflower seeds in a food processor or coffee grinder. Remove to a large bowl.
2. Put all the other patty ingredients in a food processor and blend until the texture is fairly smooth but still has some small chunks.
3. Add the mixture from the food processor to the ground seeds and nuts and mix well. The mixture should then be a pâté-like consistency. If it’s too wet, add some more grated sunflower seeds. If it’s too dry, add some more water.
4. Use your hands to form the mixture into patties and place them onto a ParraFlex sheet on a dehydrator tray. Dehydrate 3 to 4 hours. Flip the burgers by inverting the dehydrator tray onto an empty tray without a ParraFlex sheet and then removing the ParraFlex sheet and the first tray.
5. Dehydrate for another 8 to 10 hours or until burgers are crispy on the outside but still a little spongy. These are best eaten warm right out of the dehydrator, but you can refrigerate them for up to a week if necessary.
6. To make the pesto sauce: Put the lemon first, then all the rest of the ingredients, in a blender. Blend well. (If you are using the pesto as a dressing, you might want it a little thinner; in that case, add more water to achieve the desired consistency.)
Serve chilled. The pesto may be stored in the refrigerator for up to 2 weeks.
7. To construct your burger, place a leaf of romaine on your plate and set your patty on top of it. Spoon on 2 or 3 tablespoons of pesto sauce, then place a slice of red 
onion, a slice of tomato, and some alfalfa sprouts on top. Take another romaine leaf and cover the sandwich with it, wrapping the extra part of the leaf under the sandwich and around the back. Your burger is ready to go.

David's been on quite a journey. Taken from  an interview by Kelly Howell. 


The Chinese calendar proclaims 1990 as the year of the horse. In 1990, I felt like a horse put out to pasture. My shoulders were rounded, my posture poor. A weak back put me down for days ata time, my knees and shoulders constantly ached, and the circulation in my legs was so feeble that a doctor suggested I wear stockings. Digestion and elimination were a struggle  and I wasn’t sleeping well.

Sometimes when we ignore God's subtle clues, he hits us across the head with a 2X4. In 1991, my awakening came in the form of a pesticide poisoning. The right side of my lymphatic system collapsed. My glands swelled and large lesions erupted on my shoulders, neck, and back. My liver was a mess, my kidneys hurt, I was only 34 years old.

I consulted with a friend of mine who told me to go jump.

Thanks a lot, I replied in a sarcastic tone.

NO not off a building, he laughed, on this. He pulled out a mini-trampoline. It was a simple and effective solution.
 A SIMPLE & EFFECTIVE SOLUTION
With the encouragement of my friend, I bought a mini-trampoline, or rebounder, and started bouncing. At first by balance was poor. I'd bounce in rhythm with my child. She would hold on to her crib while I'd cling to a door jam.

My balance quickly improved; so did my sinuses. In 3 weeks I had much more energy and after the first month I dropped a belt notch. Noticing my arms, my wife asked if I was lifting weights. I smiled, No weights, just bouncing. She started bouncing too, and our relationship and sex life improved dramatically! Within six months my double chin disappeared and my stomach went from flabby to flat, ripped, and rock-hard.

People wanted to know what I was doing. I enthusiastically told them to bounce. They started to experience their own results and it spread. Before I knew it, I was invited to speak in front of clubs and civic organizations. I was finding more joy teaching people to bounce than I ever did selling insurance.

Within two years my knees were greatly improved. I became flexible and could touch my toes, though I never stretched. I could stand on one leg and tie a shoe without holding on to anything! My vision even improved. My physique became lean and defined.

I was only Cellercising 10 minutes a day even in front of the TV or on the phone. No more health club fees or expensive equipment. For the first time in my life being healthy was easy. Then something happened that changed my life forever.

Tragic Results from a 'Typical' rebounder
Because of my enthusiasm, my father bought a typical rebounder; the kind you can buy at sporting goods stores. Typical rebounders use cheap, often weak tube springs, a sagging mat, and a weak frame. Within one month on a typical rebounder, my father was permanently disabled, suffering nerve damage. Since I was younger and more resilient, my body could better tolerate the jarring effect. However I often found the rebounder would hurt my back. But now my father was seriously injured, he was crippled. I was dazed and angry. People were getting hurt and I felt I needed to warn them. The same year my Dad was injured, Dr. Morten Walker, in the Townsend Letter for Doctors, warned that the jarring affect at the bottom of each bounce can be dangerous. The same year I introduced a whole new concept in mini-trampolines.

I set out on a mission to enlighten people of the benefits of Cellercise® and the problems with typical rebounders. I became known as Mr. Rebounder. It sounds like a third-rate superhero, but that is what people started calling me. I became passionate about my mission.

AN EXPLOITED TREND
Bouncing on a mini-trampoline became a huge trend in the 70s. Like most trends it was exploited. Products with weak springs and poor mats flooded the market. These cheap rebounders were little better than jumping up and down on concrete.

I did some research. In the Townsend Letter for Doctors, Dr. Morton Walker warned that, there is no yield to them [the typical rebounder] and the abrupt jarring effect is the same as landing on the floor. He went on to warn against using these products which can lead to nerve damage and lower back problems.

I searched for a mini-trampoline I could put my name behind. Over the years many individuals and companies tried to partner with me. I'd been on Good Morning America, CNN, and numerous radio and talk shows. I was Mr. Rebounder, and everybody wanted my endorsement. I turned down several lucrative infomercial opportunities because they were about money, not a quality product and program. Cellercise had transformed me, and I wanted people to know it could do the same for them, but I needed the right product. In 1993-94, I introduced a soft bounce rebounder to the public. The springs were tapered, and created a gentle, soft bounce. It was the best at the time, but I was still not satisfied and the company producing it for me still produced the typical style rebounder.

The Advent of the Cellerciser®
In 1998, after several years of research, experience, and development, I finally created a mini-trampoline that I felt comfortable putting my name on. I just had to figure out what to call it.

In one of the more humorous marketing bungles of history, Chevrolet introduced the Nova in Mexico. In Spanish, 'nova' means doesn't go, a questionable name for a car. I felt the same way about the name 'rebounder'. Websters Dictionary defines rebound as a reaction to setback or frustration. Since typical rebounders are described in this manner, I did not feel like focusing on frustrations; especially since vertical movement afforded so many positive benefits.

In addition there were too many bad rebounders on the market and too many companies claiming that their inferior product was the best and frankly they weren't.

Cellercise does not focus on set backs, it focuses on promoting wellness. With healthier cells, problems fade away. Since my program exercises cells, it seemed appropriate to call it Cellercise®” and my equipment the Cellerciser® Hence, Don't Just Exercise, Cellercise!, became my message.

THE RESULTS OF CELLERCISE®
I'm now in my early 50's, and the benefits of Cellercise® continue to amaze me. In 1997, I learned that I have increased my height from 5'10 to 5'11. I actually got taller. It is all documented. I look and feel great. The belly is gone, replaced with a 6 Pack of rippled muscles. My posture is now erect, my digestion and elimination processes are smooth, easy, and efficient. My metabolism has increased.. yet I sit behind a desk all day long. I do no other form of exercise. I Cellercise 10 minutes a day that's it, and I feel like a kid again.

I'm elated that Matthew Kenney came up with this book. One question I am always asked is how to prepare raw recipes easier and Matthew Kenney put together this great raw food recipe book. Russell James The Raw Food Chef's Carrot Cake

For this month's potluck I decided to throw together this vegan raw food recipe by the raw food chef, Russell James. 
Carrot and Orange Cake


2 cups pecans, ground in a food processor
3 cup carrot, finely grated
1/4 cup raisins, roughly chopped
1 teaspoon nutmeg
1 1/2 teaspoon mixed spice*
Date paste**
1/2 teaspoon salt
1/2 teaspoon orange zest
1/2 cup desiccated coconut
* Mixed spice is a blend of cinnamon, coriander seed, caraway, nutmeg, ginger and cloves. If you’re in the US you can use pumpkin pie spice.

** Make the date paste by grinding 1 cup soft dates and 1/2 cup orange juice in a food processor until smooth.
- Thoroughly mix all ingredients together in a large bowl.
- Shape into individual cakes or press into one large cake, ready to be cut at the end.
- Place on a dehydrator sheet and dehydrate at 115 degrees F for 8 – 12 hours. If you don’t have a dehydrator you can simply place the cake into the fridge to set.

For the frosting
1 1/2 cups cashews
2 TBSP agave
1/2 cup water
3 TBSP coconut oil
1 TBSP vanilla
1/4 TSP salt

 Blend all ingredients in a high speed blender until smooth.
 Place in fridge to achieve a thicker consistency and spread on cake when you’re ready to serve.
 Garnish cake with nutmeg.

Vegan Raw Food Potato Salad Recipe


This raw potato salad recipe came from Matthew Kenney's book "Everyday Raw!" I just wanted to show you how much it looks like the real potato salad recipe. Did I like it? Oh yes, I will make it again. The jicama in this raw food recipe gave it a slight crunch but the flavors were totally potato salad if that makes sense. A great picnic recipe to talk along on our hikes! So if you see Matthew Kenney's book at the local bookstore. I say "grab it!" I've tried several of his easy vegan raw recipes.

Raw Spicy Zucchini Chips Recipe

This easy raw vegetable recipe for dehydrated zucchini chips is one of my favorites! Another one of my favorite dehydrator recipes. Quick and easy. Store in glass jars.

Eating raw zucchini is easy with this recipe. Just make sure you make a lot because they will disappear. 
Before I even started eating a raw food diet I tried making dehydrated zucchini chips and I wasn't too excited. You don't have to be on a raw vegan diet to enjoy these yummy treats.
I found when I think they are done to dehydrate even longer and they are even better!!

Marinade:
4 Tablespoons fresh squeezed lemon juice
2 1/2 Tablespoons extra virgin olive oil
1/2 tsp paprika
1/2 tsp celtic salt
1/4 tsp cayenne
2 1/2 tsp onion powder
2 1/2 tsp garlic powder
1/2 tsp basil
1/2 tsp oregano

2-3 zucchini 

Slice your zucchini with a madeline very thin. 

Mix marinade and toss with sliced zucchini and lay out on dehydrator trays in a single layer. 

Dehydrate 14-20 hours.
