Zucchini Cheesy Pasta













I made a huge batch yesterday and I decided to take a photo of my pasta after you dehydrate it for about 4-5 hours, so you know when your done. This is just amazing! I can't wait for my spirooli to get here.
The leftovers I put in the refrigerator and today about a hour or so before I'm ready to eat, I'll just throw it back on the dehydrator and let it warm it a bit. So I would call this another "quick and easy" recipe and not a lot of work to prepare just your dehydrating time while your busy with the rest of your day.Great healthy raw meal that makes you feel like your eating really healthy!!

Zucchini Cheesy Pasta

This healthy cheesy pasta is great! The last time I made it, it didn't make it off to a plate to take a photo. So I took a photo before hand! I don't have my Spirooli yet, and I do have a Saladacco, that I've had for years but I wanted thicker noodles so I grated the zucchini. This is quick and easy and I've had so many people ask me for "Quick and Easy"! So here is a quick and easy vegan pasta recipe that I just love!!










Zucchini Cheesy Pasta

4 small zucchini
1/2 red bell pepper
1/2 small yellow onion
2 tbsp extra virgin olive oil
2 tbsp lemon juice
2-3 tbsp nutritional yeast
2 tbsp sesame seeds (grind in coffee grinder)
1/2 tsp basil
1/2 tsp garlic powder
2 tsp onion powder
1/2 tsp celtic salt

Grate zucchini, then slice red bell pepper and onion with a mandoline. Add remaining ingredients and toss until mixed well. Spread on dehydrator tray with parchment paper and dehydrate for about 4-5 hours until tender. Do not over dehydrate!!

Warm Corn Bread

I'm sorry that I have no picture for this vegan raw corn bread. It did last long enough to take a photo. I can't remember where I found this recipe but I can not wait to make it again. It is the best tasting stuff! Just amazing!!!!!

Warm Corn Bread


4 ears of fresh organic corn - cut from the cob (you can substitute 16 oz. of frozen organic corn)
1/2 sweet yellow onion
1/3 of a large red bell pepper
3/4 cup ground golden flax seeds
1/2 cup ground sunflower seeds
juice of one lime
1-2 jalepenos (you can use a milder pepper, if you prefer)
1 tbsp. raw honey (I added just a bit more to mine ;-)
2 tsp. sea salt
1 clove minced garlic
and for good measure I added a few good splashes of Tabasco sauce - another ingredient I haven't given up)

Blend all ingredients in your food processor until you have a nice grainy texture. On Teflex lined dehydrator trays, begin scooping the mixture and build muffins or biscuit like formations. Mine were about 3 inches wide and 1-ish inch thick. Place into your dehydrator and set at 105 degrees overnight or for about 8 hours. Flip your muffins over and continue to dehydrate another 12 or so hours or until you reach your desired consistency.

RAW Walnut Red Pepper Crackers

I like trying new crackers and have a variety to choose from and here is yet another cracker I just tried. Crackers with walnuts always have a rich taste. Now I need to make some RAW Zucchini Hummus!











Walnut Red Pepper Crackers
2 red bell peppers-remove seeds
1 1/4 cup walnuts soaked 1-2 hours in water
1/2 cup golden flax seeds
1/4 cup hemp seeds
1 tsp celtic sea salt

Using a food processor pulse the red bell pepper into small chunks. Put into large mixing bowl. Now place drained walnuts in processor and grind into small pieces. Grind flax seeds in coffee grinder. Combine all ingredients and mix. Add water if too dry to hold together. Spread thinly on teflex paper or parchment paper. Dehydrate until dry at 105˚.

RAW Coconut Balls

These vegan raw food Coconut balls are quick and easy. Four ingredients and you have coconut balls! Everyone loves these raw coconut balls!!













Coconut Balls
1/2 cup carob powder
3 cups shredded coconut
3/4 cup coconut butter (melted)
1/4 cup agave

Mix all ingredients in a bowl and I use a stainless cookie scooper to form balls. Store in plastic container and keep cool.

Lemon Cookies

Tart, chewy lemon macaroons. I’d

recommend at least doubling this

recipe, as the cookies are addictive

and go quite fast!












Lemon Cookies

Makes 12 small cookies


1 cup cashews, soaked for 4 hours

zest of 1 lemon

½ cup fresh lemon juice, (approximately 2

lemons)

1 cup dry shredded coconut

¼ cup agave


Process cashews in food processor until they are pasty in consistency. Mix in all other ingredients. Place 1 tablespoon cookie dollops on a dehydrator sheet. Dehydrate for approximately 12 hours at 105°F (could also dehydrate at 115°

F for 8-10 hours with similar result).

Nut-less Cheesy Kale Chips

How to make kale chips...
Okay girls...all I can say is YUM!
This one I really like because it doesn't have the nuts to add that extra fat.












These kale chips I threw together before I went to bed.
I just washed kale and broke into pieces, dried and put in a large pot.
I added about 1-2 tablespoons of olive oil, then I mixed it well with my hands and added nutritional yeast flakes, onion powder, garlic powder, paprika and cayenne.
Put on the dehydrator.

This recipe was for 1 bunch of kale.

Jennifer Cornbleet Vegan Raw Food


Love, love Jennifer Cornbleet. I have to say, this is one book of the vegan recipes on raw foods that doesn't require a kitchen full of obscure appliances and a direct pipeline to Whole Food's exotic produce section. You can make most of these recipes from things you find in any grocery, with perhaps the addition of raw nuts like almonds, walnuts and cashews.

The book has attractive photography, which helps you choose some recipes like raw wraps, either in kale, cabbage or nori wrapping or you might go for the desserts which were numerous and very luscious-looking (fig cake, key lime mousse, berry crisp.) The "spaghetti" made of spiral-cut zucchini with a raw coulis of tomato, dried tomato and other herbs was served with walnut pate "meat balls."

The author points out that raw food can be made with a blender and not much else but a cutting board and can be good for campers or motorhome travelers who may not want to go nuts with a stove.

This book has some very tempting but healthy recipes and is a nice way to get your five servings of veg a day.

We started at the base with the elevation at 4464
and when we reached the summit, we were at 6817 in elevation.
This was in April, the day after the ski hill closed.
What fun! We love adventures!!

RAW Onion Crackers

RAW Onion Crackers

These are my favorite by far and very simple to make. Another quick and easy!

3 huge sweet onions (puree in food processor)
1 cup sunflower seeds (raw)(grind in coffee grinder)
1 cup flax seeds (grind in coffee grinder)
1/8 cup olive oil
3 tbsp agave
celtic salt or nama shoyu (2 tbsp)
Mix all together and spread on parchement paper and dehydrate until crispy.
Enjoy! I can't keep my hands off these they are so good.

Mini Cleanse
Every morning when I wake up I try to drink my lemon water before doing anything else. I take warm hot with lemon juice in it and sometimes a pinch of cayenne. Great way to start the day.

The warm water will go straight to the large intestines and many times move the bowels.The drink is cleansing to the kidneys and healing to the liver. A simple morning purification of the urinary and digestive system after a night's sleep.

Another version of "Kale Chips"

How to make kale chips!

Another Kale Chip recipe...trying different spices for different flavors or kale chips. So many possibilities!! Thai, Mexican, Cheesy, Chipotle, BBQ and the list goes on.

I took and washed 1 bunch of curly kale and broke into pieces.












Then I took 1 tablespoon of olive oil of poured over kale chips and toss with your hands.

In a little cup I mixed
1/4 tsp onion powder
1/4 tsp chili powder
1/4 tsp garlic powder
1/4 tsp basil
pinch cayenne
pinch of cumin

Mix the seasoning mixture before you sprinkle it over the kale chips and toss with your hands.
Dehydrate until crispy and enjoy. YUMMY

Raw Food Burrito Wrap Recipe

This is a quick raw food fix! No recipe here just throw together kind of food. Maybe took me 10 minutes
to prepare.

First I made my "Walnut Meat" by taking about 1/4 cup walnuts and I put them in my coffee grinder and chopped them up, then a quick sprinkle of cumin powder and you can moisten it
with nama shoyu or water with a bit of celtic salt.

Then take as much avocado and smash it with a fork and add garlic powder and celtic salt.

Chop tomato, onion, and cilantro.

I have another raw burrito that I will post soon. It's great!













Roll into a kale leaf burrito and your good to go!!

Grow Wheatgrass

Sprouting Wheatgrass
Growing wheatgrass at home is very easy and in a previous post, I had sprouted 1 1/2 cups winter wheat seeds in sprouting jars until they had little tails usually this takes about 2 days.












I started by spreading the sprouts on a 12 x 16 cafeteria tray being careful not to damage sprouts. Then I s took organic potting soil and spread over the sprouts evenly and patted in place. Then I sprinkled kelp powder I purchased at the local nursery in town and I took a spray bottle and sprayed to saturate the entire tray.










Then I took a 14 x 18 cafeteria tray and put over the 12 x 16 tray and inverted it




















I sprayed the top real good also.
I took another 14 x 18 tray and placed on the top until I see some growth.

Kale Chips

Hooked on kale chips...

Well this morning our son asked me what was in the dehydrator that looked moldy. I knew exactly what he was talking about. My little delights! Wow, I went back to check on the kale chips and most were all done. My first bite, I couldn't believe what I was tasting! Today at lunch, I pulled out the Cheesy Kale Chips and my husband was reluctant to try them but after he tried one, he took a handful after handful.
They remind me of Doritos! I have another bunch of curly kale in the refrigerator and I'm making more tomorrow!

Cheesy Curly Kale Chips

Kale Chips Raw Food Snack
Just whipped these up and threw them on the dehydrator. The rave is all over the internet about "Kale Chips"!! Well, here we go! When they were done, I popped one in my mouth!! All I can say is yummy!













CHEESY CURLY KALE CHIPS

1 large bunch green curly kale, washed, large stems removed, torn into bite size pieces

COATING:
1 cup cashews, (soaked 2 hours)
1 red bell pepper, seeded and chopped
juice of 1 lemon
1 T. nutritional yeast
2 t. agave (opt.)
1/2 t. himalayan pink crystal salt

Put coating ingredients in Vitamix. Blend until smooth. Using your hands, spread coating on kale pieces getting it inside of curls. Put on teflex sheets and dehydrate at 105 overnight or until coating is dry. Slide onto mesh screens and dehydrate 12 hours, or until very crispy.

Here I have 2 cups of wheat kernels that I have soaked and now in my quart size mason jars with these sprouting lids.
Tomorrow I will start the process of growing wheatgrass.

Jennifer Cornbleet

Green Juices



I have Jennifer's cookbook which is a great cookbook. Only a few kitchen tools are needed to prepare her recipes which makes it nice.

Juicing is a fabulous way to assimilate and absorb the maximum nutritional content of fruits and vegetables. All the enzymes, water soluble vitamins and minerals inherent in these foods are condensed into one glass of juice and, because of the absence of fiber, the highly concentrated nutrients go straight into the bloodstream.

Sun Valley Crackers




While in Sun Valley I was able to eat at Akasha Organics a raw food cafe. I was able to eat there everyday and when I was done each day I wanted to lick the plate clean. They had these round tortilla sized raw crackers that were amazing. The lady was very helpful and told me how to make them with a handful of this and a handful of that. So that was the best instructions I got in between customers. So, I came home and played with the raw recipe and this is what I came up with. These are great to make healthy raw vegan tostadas with. I always have a bag full in my pantry they seem to keep for a long time. You can just use fresh tomatoes too.











Tomato Basil Flax Crackers


1.5 cups sun dried tomatoes soaked

3.5 cups flax seeds soaked

2 tsp onion powder

1 tsp garlic powder

1/2 tsp Italian seasoning

2 cloves garlic

lemon juice from 1 lemon

Handfuls of fresh basil

Use food processor to chop tomatoes add soaked flax seeds. Spread on parchment paper

and dehydrate until crispy.

Spicy Lime Nuts




















Spicy Chili Lime Nuts

2 cups almonds

2 cups pecan

1/2 cup agave

1/4 cup date sugar

1/4 cup lime juice

1 TBSP chili powder

1 TBSP sea salt


Soak nuts 6 hours or more. Drain and place them in a large bowl with remaining ingredients. Toss well. Pour onto parchment paper and dehydrate until crisp.

I was afraid I wouldn't like the chili flavor on nuts but was I surprised.

Very good and the lime pops in your mouth.

RAW Onion Rings



This in one of the first raw vegan foods I tried on the dehydrator. I thought how could something taste like onion rings and be raw, healthy and not greasy. Boy, was I surprised!! Everyone in the family tries my raw stuff and wants it too, especially when it's a dessert!
These are good on a salad or just to eat like you would onion rings!! This vegan raw recipe is a keeper!














"Fried" Onion Rings

1 large sweet or spanish onion cut into rings

1st coating
4 tbs. olive oil
2 tbs. water
Sea salt to taste

2nd coating:
1 cup ground golden flax seeds
1/2 cup ground unsoaked almonds
1-2 tsp. paprika
Pinch of cayenne
Sea salt 

How to: Take each onion ring, dip it into the 2nd coating, then into the 1st coating and then back into the 2nd coating. Your goal is to get as much of the 2nd coating as possible. Once you have achieved that, gently take the the coated onion rings and put them on dehydrator trays (without teflex sheets) and dehydrate the rings for about 10-14 hrs at 105 degrees F. or until crispy.

Healthy Breakfast Granola


Here's another granola recipe I tried. Everybody loves it!! Great healthy snack too!










Granola
1 1/2 cup soaked almonds
1/2 cup soaked sunflower seeds
1/2 cup soaked pumpkin seeds
1/2 cup whole raw buckwheat
7 apples
1/2 cup dates (seeded)
1/2 cup raisins
1/2 cup dry coconut
1/2 cup agave nectar
1 tsp vanilla
2 tsp cinnamon
1/3 tsp salt

In a food processor, process apples, then transfer to bowl and process nuts and seeds. In the processor also puree the dates. Mix remaining ingredients and spread out on dehydrator trays lined with parchment paper if you don't have liners already. Dehydrate for about 8 hours, then flip over pulling them away from the trays if they are not sticking and dehydrate until dry.

My Grinding Tool



















If your wondering how you can grind nuts without an expensive high powered blender. This is a great tool. I grind healthy flax seeds, sesame seeds, almonds, sunflower seeds, etc. Just makes it easier if you can't afford that blender right now. These little mills work great. Great for all those raw recipes!

There is also a "Bullet Blender" out there that is suppose to grind up the nuts really good too. I haven't used one but heard they do good too.

Marinated Veggie Salad


This salad I remember my mom making all the time. Very healthy, easy and if you not a fan of raw cauliflower or broccoli this might do it. I don't really have a recipe for this. I just throw it together how I want it. Olives can be added. Use your favorite healthy vegetables. My mom used to just buy a bottle of Italian dressing and pour over the salad. Tupperware used to have a container designed for this salad that was meant to marinate in. This is a good make ahead of time raw recipe and have it for several days.











Marinated Veggie Salad
Broccoli
Cauliflower
carrot (matchstick cut)
zucchini
radish

Just cut into nice small pieces and marinate with dressing.

Dressing
Lemon juice of 2 lemons
Olive oil
1/2 tsp Herbamare
1/2 garlic powder
1/2 tsp onion powder
1/2 tsp Italian seasoning

Make you dressing to taste and pour over veggies in lock tight container. Turn it upside down every so often when you open the refrigerator to let marinate adsorb everything.

Keeps for several days.

Sesame Garlic Spread

My husband named this "catfood" after we had some young Mormon men in their 20's volunteer to come help with some landscaping work we were doing. They came and helped for a few hours and we fed them a vegetarian meal. They never had vegetarian lasagna let alone a whole meal vegetarian. When Randy passed the bread he quickly grabbed the "sesame spread" as we always called it and renamed it that moment to "cat food". So ever since then it's been cat food. Not sure what the young men thought. They used it on their bread. If you like garlic, this packs a punch! I don't have a recipe for it, I just throw it together. The bread isn't raw but I had to add this for you all to try. Great raw recipe for healthy eating!!












Sesame Garlic Spread

About 1/4 cup sesame seeds
4-5 or more cloves of garlic
sea salt to taste

Grind sesame seeds in coffee mill
Mince the garlic
In a bowl mix sesame seeds and garlic, then add enough water to make a paste. Salt to taste.

This is good waters down a bit more and add as a sauce to spring rolls.

Spicy Thai Wraps

Oh my! I invite you to try these wraps. Love these healthy vegan raw wraps! These Thai wraps made with organic collard greens are easy and delicious, plus fun to make. You can spice them up with some extra chili's or chili flakes.












Spicy Thai Wraps

1/2 cup chopped raw cashews
1 tb sesame oil
1/2 tsp sea salt
1/4 cup maple syrup
1/2 cup lemon juice
2 tbsp chopped ginger
1 tbsp red chili pepper
1 1/2 tbsp nama shoyu (opt) Can use celtic salt to taste
1 cup raw almond butter
1/2 head napa cabbage, shredded
6 very large organic collard green leaves
1 large carrot, cut into match stick-size pieces
1 large ripe mango, cut lengthwise into strips
2 cups bean sprouts
1 handful cilantro
1 handful torn basil leaves

In a small bowl, mix cashews, sesame oil, and salt and set aside.

In a blender, puree the maple syrup, lemon juice, ginger, red chili, and nama shoyu. Add the almond butter and blend at low speed to combine. Add water to thin if necessary, to get a thick, cake batter like consistency.

In medium bowl, add the shredded cabbage and the almond butter mixture and toss well to combine.

Cut out the center rib of each collard green leaf, dividing the leaf in half. Place 1 half leaf on a cutting board with the underside facing up. Arrange a few tablespoons of the cabbage mixture evenly across the bottom third of the leaf, leaving about 1 1/2 inches clear at the bottom. Sprinkle with cashews over the cabbage. Lay a few sticks of carrot, a few strips of mango, and a few sprouts on top. Add a few leaves of cilantro, basil. Fold the bottom of the collard up and over the filling, keeping it tight, and tuck the leaf under the ingredients and roll forward. Place the roll seam side down on a serving dish. Repeat with remaining collard leaves and ingredients.

This healthy raw recipe was given to me by a lady "Mimi Kirk" what an inspiration she is. She's 70 and she looks like she is in her 50's. Just shows what a good healthy diet does for your body. Diet does a body good!! Great healthy snack!














RAW Granola

Yields 10 cups (can also be made into energy bars)

3 apples cored and chopped
1 1/2 cups date paste (dates soaked and then processed until smooth)
1/2 cup maple syrup
2 T lemon juice
2 T orange zest (or ginger powder)
1 T vanilla extract
1 tsp. ground cinnamon
2 tsp. sea salt
1/2 cup soaked oat groats
1/2 cup sunflower seeds, soaked 2 hours or more
2 cups almonds, soaked 4 hours or more
3 cups pecans, soaked 2 hours or more
1 cup pumpkin seeds soaked 2 hours or more
1 cup dried cranberries or raisins or dried apples or all of them combined

In a food processor, place the fresh apples, date paste, maple syrup, lemon juice, orange zest, vanilla, cinnamon, salt and 1/4 of the sunflower seeds and grind until completely smooth. Transfer the mixture to a large mixing bowl.

Add the remaining 1/4 cup of sunflower seeds, the almonds, pecans, and pumpkin seeds to the food processor (you don't need to bother rinsing the bowl in between). Coarsely chop the nuts and seeds in a few quick pulses. Add them to the bowl with the apple mixture, add the cranberries and combine well.

Spread the granola on a Teflex lined dehydrator trays and dehydrate at 110 degrees for 6 - 8 hours. Flip the granola over onto the screens and peel away the teflex. Continue dehydrating for another 8 to 12 hours, or until the granola is crunchy. Break into pieces and once completely cooled, store in an airtight container. To maintain freshness longer, store the granola in the refrigerator for up to a few weeks.
