Danny On Trail Big Mountain Whitefish, Montana Youth Hike

Starting at an elevation of 4464 at the bottom of Big Mountain we took the very popular Danny On Trail, which meanders up the slopes of Big Mountain through blooming wildflowers to the 6,871 summit. The main route is 3.8 miles UP! It's a beautiful hike and great exercise!!
 I didn't see any huckleberries ripe yet. I heard at the base lodge they are ready to pick!

 Looking out at the Flathead Valley and the big lake there is Whitefish Lake.

Glacier National Park Going to the Sun Road

 Glacier National Park is a hiker's paradise. We enjoy everything about Glacier Park. The Going-to-the-Sun-Road is just breathe taking!! Not open year round so when it opens in July we take advantage of it.

 We always see the mountain goats up at Logan Pass and many other locations throughout the park. 

Swiftcurrent lake rests at the base of Mt. Grinnell in Glacier National Park. 
We found some grizzly bears over by Many Glacier also.

Glacier Park Logan Pass Hiking and Ski Fun in July


Up at Logan Pass in Glacier National Park. We decided to go boot packing and have some ski fun so we hiked in the snow up to Hidden Lake where we had some ski fun. As always we find the mountain goats!! Beautiful day!

For my raw food lunch I brought some raw pizza, raw paroka out of Alissa Cohen's book, raw buckwheat crackers, raw cashew hemp cheese and some yummy chia pudding and as always I give out samples. For the rest of the family I made vegan black bean burgers and potato salad.

Raw Recipe Carob Cream Pie

This easy raw food recipe for raw carob pie doesn't last long. This raw carob recipe is a easy raw recipe to make. Looks like you worked hard but didn't.

Carob Cream Pie
Best if you let it freeze. Take out about 15 minutes before serving. YUM
Crust
1/2 cup raw almonds (not soaked)
1 c fine shredded coconut
1 TB vanilla
1/2 c pitted dates (soaked)
1/2 c raisins (soaked)
Blend in food processor until finely ground.
Cover bottom of spring form pan with parchment paper.
Press crust mixture on top of parchment paper until even and well flattened. Put crust in freezer while preparing filling. 

Filling
2 large avocados, not too mushy
1/2 – 3/4 c raw carob powder
1 orange, juiced (squeeze by hand)
1/3 c pitted dates 
1/4 c honey
1 tsp vanilla
Blend the dates and orange juice. Add remaining ingredients and blend until smooth. Take crust out of freezer and smooth carob filling over crust and return to freezer. 

 Cashew Vanilla Cream
1 cup organic raw cashews (soaked)
1/4-1/2 cup  water depending on desired thickness
1-2 Tbsp agave, honey or maple syrup
1 tsp natural vanilla extract, or a little more to taste
1/4 cup coconut oil
8 dates (soaked for a few hours)
a pinch of Celtic sea salt
Combine everything into the blender and puree until thick and creamy.
It is a good idea to start with ¼ cup of water, and then gradually thin it out in order to achieve the desired thickness.

When the carob filling is very cold spread the cashew vanilla cream over carob filling and spread evenly and return to freezer. Leave in freezer for a few hours then it's ready to cut and serve.

Raw Cinnamon Rolls Cafe Gratitude I Am Thrilled

Just wanted to show you this great recipe out of "I Am Grateful."
Just think raw cinnamon rolls and let me tell you they are worth it. A easy vegan raw food recipe that is not at all hard to make. You just need a little preparation like almond milk pulp and soaking your almonds. The longer part is waiting for them to come out of the dehydrator. After you get used to the concept of dehydrator un-cooking it seems no different than cooking anything time wise. 

I make a lot of almond milk so I have an abundance of almond nut milk pulp. Every time I make almond nut milk I either freeze my almond nut milk pulp or I dehydrate it for raw almond pulp flour. 


 Here I am cutting the cinnamon rolls and they are ready for the dehydrator. So easy!
 They have the topping on them and heading for the dehydrator.

 Everyone liked them here. I have tried many of Cafe Gratitude's recipes in their books and have not been disappointed. Pretty basic ingredients and not long lists of ingredients. I will keep posting on my journey through both books. So stay tuned.

Glacier National Park Picnic and 12-Mile Hike

Our Glacier National Park Outing

Since Glacier National Park is in our back yard we decided to picnic today over at Many Glacier and after our lunch we headed out for a 12-milie hike heading toward Grinnell Glacier. Here are a few photos of our outing. It was a beautiful day. 

 Many Glacier Hotel you see on the other side of the lake is along the shore of Swiftcurrent Lake inside Glacier National Park. The great northern railroad built this historic hotel in 1915.
 Here you can see the boat coming across the lake with tourists to drop them off so they can take a brisk 400 yard walk to Lake Josephine and cruise across this second lake on the Morning Eagle Boat. At the head of Lake Josephine you may choose to remain on board or take advantage of more hiking in Grinnell Valley. 
 The second lake, Lake Josephine. This boat will pick you up and take you to the other end of Lake Josephine so you can hike and view Grinnell Glacier.








 Here is where the trail stopped because of snow fields. 

 Hiking through the beautiful Grinnell valley is so pretty. We missed a mama grizzly and her cubs just 5 minutes up the trail we were told and a moose darting across the trail. 


We always love our outings in Glacier National Park!
