Curried Cabbage Pillows Russell James The Raw Chef

The Raw Chef's Recipe Series - Thai Style
Have you heard of Russell James? He has taught thousands of people world-wide about raw foods. He completed a 1 year quest instructor in residence position at 105 degrees in Oklahoma City, USA. He has a great homestudy DVD course.
How To Be Your Own Raw Food Chef...& Still Have Time To Eat!
Makes 8 pillows
For the wrappers
Make 2 batches of this wrapper recipe for 8 pillows.
5 cups peeled courgette (zucchini)
3 tabelspoons olive oil
2 teaspoons Lime juice
1/2 teaspoon cayenne
1 teaspoon ground coriander
1/2 teaspoon salt
1/4 cup flax meal*
- Blend all ingredients in a high-speed blender until smooth.
- Add flax meal and blend again until smooth.
- Pour mixture onto a dehydrator sheet and spread evenly into a square. you can choose the size, but for the ones in the photo the mixture was spread 26cm x 26cm square.
- Dehydrate for 8 hours at 105 degrees F, or until able to peel of the sheet.
- Once the dehydrator sheets are removed, return to the dehydrator for 30 mins, until both sides are dry to the touch but still pliable.
* Flax meal is flax seed that have been ground in a coffee grinder or similar, to produce a fine flour.
5 cups white cabbage, shredded
6 spring onions (scallions)
2 teaspoons cumin
2 teaspoons ground coriander
1/4 cup cold pressed sesame oil
1 tablepsoon toasted sesame oil (optional)
1 teaspoon salt
2 tablespoons tamari or nama shoyu
2 teaspoons lime juice
2 cloves garlic, crushed/minced
2 red Thai chilies, deseeded and minced
2 tablespoons agave
3 tablespoons tamarind paste* (optional)
1 cup fresh coriander, roughly chopped
* Soak 200g tamarind in 1/c water and break up with your hands. Strain the mixture through a sieve and you’re left with tamarind paste. It should be roughly the consistency of watery yoghurt.
- Combine all ingredients thoroughly in a bowl.

To assemble
- Cut each of the wrapper squares from the dehydrator trays, which should still be pliable, into 4 equal squares.
- Start with one of those smaller squares in front of you so that one corner is close to you.
- Place a good amount of the filling mixture into the centre of the square.
- Fold up the corner that is closet to you into the centre, then fold up the left and right corners so that you form an envelope.
- You will need to wet the edges as you go along so they stick in place.
- Fold down the final corner, as if you were closing an envelope and use water to stick it down (you will find that you’ll get better at this the more you do).
- Place on a dehydrator mesh tray.
- When all 8 are done, return to the dehydrator for a further 1 to 2 hours at 105 degrees F. Serve with dipping sauce.
- Dehydrate any left-over cabbage mix until crispy; it makes a great addition to any salad.

For the dipping sauce
1 cucumber, peeled
1 mango, skin & stone removed
1/4 teaspoon salt
1 teaspoon lime juice
1 spring onion, finely chopped
1 small handful fresh coriander
- Blend all ingredients, except spring onions, until smooth.
- Add most of the spring onion and all the coriander and pulse in.
- Pour sauce into a small bowl and top with remaining spring onion.

Vanilla Chia Pudding

First, the benefits of chia seeds are amazing. Omega 3 to start! This raw food recipe for organic chia pudding is quick!

2 cups raw almond milk
1/4 cup organic chia seeds
1 teaspoon vanilla
6-8 drops stevia or favorite sweetner

I mix my chia pudding in  quart jar and shake about every 30 seconds for a few minutes then about every minute. If you don't shake the chia pudding the chia seeds will sink to the bottom and stick together. Trust me it's happened to me.

Top with fresh fruit like banana, strawberry or blueberries.

Blueberry smoothie

Here is a easy fruit smoothie recipe with bananas and blueberries you will love. If you want to add some green to it. Some kale or spinach would be great for a green smoothie!

2 bananas
1 cup frozen blueberry
1 cup water or homemade nut milk such as almond milk with 1/4 teaspoon vanilla

Blend in blender until blended well. Makes about 2 1/2 cups of goodness!

Sesame Noodles Raw Food Recipe

Raw Sesame Noodles

4 Zucchini
1 carrot
1/2 red bell pepper
3 scallions, thinly sliced
3 tablespoons toasted sesame oil
3 tablespoons Nama Shoyu
4 1/2 teaspoons coconut nectar
1 1/2 teaspoons grated ginger
1 teaspoon garlic powder
1/8 teaspoon cayenne powder
1 teaspoon sesame seeds

Cut the zucchini in half and run each half through a mandolin with a blade with "teeth" on it, to create noodles like angel hair pasta or use a spirooli.
Run the carrot and red pepper through the mandolin also.  Mix together the 3 different varieties of noodles and scallions in a large bowl.
In a small bowl, combine the last 8 ingredients and mix well.
Toss the noodles in the sauce.  This can be served immediately, but its even better when it has chilled for a while.

Carob Chia Cookies Raw Vegan Cookies

Carob Chia Cookies
1 cup organic walnuts
1 cup organic dark raisins
3-4 medjool dates
1/3 cup organic carob powder
3 tablespoons organic chia seeds
pinch of Himalayin sea salt
Toss all ingredients in a food processor and process until the mixture becomes dough-like. It may take awhile to break up the raisins, so give it a good few minutes. Roll out the dough and cut into shapes with your favorite cookie cutter, and place in the freezer to firm up. You could also roll them into balls to make it even less work.

Spicy Spinach and Pepper Taquitos

My favorite kind of food is anything with a Latin flare! Eating raw food is also another favorite. I don't craze what I used to crave years ago. I never thought I'd ever be able to pass up the things I used to crave. A few times a year I might indulge in some foods that have gluten but not too often. I feel too good these days to eat those foods daily. I never thought I'd ever be able to give up gluten products. Amazing how my taste buds changed.

SPINACH/PEPPER MIXTURE
1 c fresh spinach
1/2 sweet red bell pepper, diced
1/2 sweet yellow bell pepper, diced
1/4 yellow onion, diced
Juice of one lime
1 T olive oil
1 jalapeno pepper, finely diced
1 t chili powder
1 t sea salt

Place ingredients in a plastic bag Ziploc bag and marinate for 1 hour.

NACHO CHEESE
1 c cashews, soaked
1/4 c water
1/2 sweet red bell pepper, chopped
2 cloves garlic, minced
Juice of half a lemon
1 T Nutritional yeast
1 t turmeric

Blend ingredients until thick and creamy.

CORN TORTILLAS
4 c fresh corn kernels, from sweet corn on the cob
1 yellow bell pepper, chopped
1 c golden flax seeds, finely ground
1 t sea salt

Chop corn and bell pepper in a food processor. Add remaining ingredients and process until smooth. Take a spoon and spread the corn mixture on the teflex-lined dehydrator trays. You should have enough mixture for two or three trays.

Dehydrate at 110 degrees for about 5 hours.

Flip the teflex sheet over onto the tray and carefully pull away from tortillas.

Using a pizza cutter, score the tortilla in 3-inch strips (approximately 3 long strips) length-wise, then score every three inches across. You should have approximately 9 strips of rectangles.

Dehydrate for another 2 hours until tortilla is completely dry on both sides but still pliable.

To assemble taquitos, spread cheese on a the end of one tortilla strip, spoon spinach/pepper mixture on top of cheese and roll tortilla tightly to prevent it from opening.

Secure with a toothpick, if necessary.

Put taquitos in dehydrators at 110 degrees for 8-12 hours or until they are crisp on the outside.

Banana Creme Pie Raw Dessert

Could garnish with fresh fruit before serving. I love banana desserts and this raw dessert is pretty quick to prepare. You do have to make about 3 hours before serving. Fruit desserts are very healthy.

CRUST
1 1/2 c fine almond flour (I used mini coffee grinder)
1 cup dates (soaked) (food processor)
2 TBSP lemon juice.
Mix them all in the food processor and dumped in pie dish.
Spread it by hand and get it up to the edges.

Banana Creme Filling:
9 bananas
1 1/4 c coconut oil
1 cup cashews (soaked and drained)
Blend in the blender until smooth. It will look like
pancake batter. (Cut up a 1/2 banana and add to the
batter and maybe a little bit of maple syrup
Pour batter into the crust.
Let it sit in the refrigerator for at least 3 hours to set.

Raw Food Diet Recipe for Kale Chips

These easy raw food recipes are always great to make your time in the kitchen fast!
Use your Blendtec Blender!

2 bunches kale, stemmed and torn into pieces
1 cup pumpkin seeds, soaked & dehydrated
1/2 cup raw sesame tahini
1 cup water
3 stalks celery, chopped
4 green onions, chopped
5 tbsp fresh lemon juice
2 tbsp coconut aminos or salt of your choice
1 1/2 tsp ground cumin
1 pinch cayenne pepper

In a blender, combine all ingredients except the kale. Blend well and season to taste. Keep in mind that you are aiming for a thick, batter-like mixture that will coat the kale. Thoroughly mix the dressing mixture in with the kale, using your hands to rub it in so that it is dispersed evenly over all the kale. Spread the coated kale on dehydrator trays (using ParaFlex sheets beneath). Dehydrate until dry and crispy. Store in an airtight container.
