Raw Food Recipe Banana Bread Walnuts

Quick Raw Food Recipe
I found these a while back on "The Raw Seed" website. I made them with walnuts and pecans mixed together.  If you close your eyes and taste these you would think you just took a bite of banana bread!

Banana Bread Walnuts

4 cups walnuts - loosely chopped into pieces (soaked for 24 hours and dehydrated OR dry)
3 medium RIPE bananas
1/4 cup raw honey
1/2 tsp. cinnamon
pinch of sea salt
1/2 cup raisins
1/2 cup shredded coconuts

1. Place the walnuts in a medium size mixing bowl. Blend the bananas, raw honey, cinnamon and sea salt in a blender. Blend until smooth.

2. Pour banana mixture into the bowl with the walnuts, raisins, coconut, and stir until the walnuts are evenly coated. Spread this mixture on a Teflex lined dehydrator sheet, dehydrate on 105 degrees for 24 hours.

3. Store Banana Bread Walnuts in a mason jar and enjoy on their own OR as cereal with almond milk.

Raw Manicotti

Raw Food Recipes for Beginners
Raw Manicotti

Ingredients
For the Noodles:
4 medium zucchini
2 tablespoons olive oil

For the Spinach & Sunflower Cheese Filling:
2 cups of sunflower seeds
1⁄2 cup water
1⁄2 cup lemon juice
3 cloves of garlic
1 teaspoon Himalayan salt
8 cups spinach
1⁄2 cup parsley
11⁄2 tablespoons Italian Seasoning

For the Herby Tomato Sauce:
1 1/2 cups of sundried tomatoes, measured after soaking
2 1/2 cups grape tomatoes
1 tbsp cup cold-pressed olive oil (opt)
1/3 cup raisins
3 cloves of garlic
2 teaspoons oregano
2 teaspoons basil
2 teaspoons thyme
1⁄2-1 teaspoon salt, only if your sun-dried tomatoes are unsalted
2 tablespoons hemp seed, for garnish, if desired

Methods/steps
1. Soak 2 cups of sunflower seeds in pure water for 4-6 hours. Drain and rinse.
2. In a separate bowl, soak 2 cups of sundried tomatoes in pure water for 4 hours or longer. Drain

For the Noodles
1. Cut off both ends of each zucchini. Using a mandoline, slice the zucchini the long way so that you have long, wide noodles. If a mandoline is not available, use a knife, cutting as thinly as possible.
2. Place in a bowl, drizzle with olive oil and toss very gently.

For the Spinach & Sunflower Cheese Filling
1. In a high-speed blender, combine sunflower seeds, water, lemon, garlic and salt.
2. Blend well until smooth. Scrape into a large bowl.
3. In a food processor, process the spinach and parsley in batches until chopped but not puréed. Alternately, chop finely by hand. Pour into the bowl with the sunflower cheese.
4. Add Italian seasoning and mix well.

For the Herby Tomato Sauce
To make the Marinara, place all of the ingredients into a food processor and process until smooth.

1. To assemble, arrange 4 zucchini noodles horizontally on a cutting board, slightly overlapping one over the next by about 1⁄2”.
2. Place 1⁄4 cup of the spinach & sunflower cheese filling in the center and spread so that it covers the front to the back and about 1” in width.
3. Roll the zucchini from left to right to create a filled manicotti.
4. Place two manicotti on a plate and top with 1⁄4 cup of tomato sauce. 5. Garnish with a drizzle of olive oil and a sprinkling of hemp seeds and/or Italian seasoning.

Calzone "Living on Live Food"

I finally took photos and posted Alissa Cohen's "Calzone" from her book "Living on Live Food!" I have had several recipes out of this book and all have pasted the test. If you don't have this book you might want to take a peek at it. It's a keeper!
Carmella has posted the recipe here on Raw Freedom Community.

Carmella writes that is freezes well. She also said she made two calzones which I will do next time. It is huge and I just made a big rectangle. I will be making this recipe again. I also added a chunk of yellow onion to her cheese recipe.
YUM!

Absolutely Abeba's Krazy Krackers

Have you come across this book?
I've had a few of the crackers in this book and can't wait to make each one. Krazy krackers are my favorite. Go to Abeba's website and check out the other books she has as well. She's a really neat lady with some great books.
Abeba started her raw food journey in January 2000 and comments that it wasn't always easy but she was committed to optimum health. One thing that you will notice about Abeba's krackers is the "krunch" and a kracker that has no crunch isn't a kracker.

The recipes include:
  • Pizza Kracker
  • Vegetable Garden
  • Flax Appeal
  • Mellow Yellow
  • Yellow Kracker
  • Barbecue Chips
  • Corn Chips
  • Hurry Curry
  • Sunflower Power
  • Poppyseed Ginger Kracker or Cookie
  • Garlic Kracker
  • New Corn Wafer
  • Spicy Thai Kracker
Now that is a huge variety for krackers! Five-star krackers that is!

Raw Food Recipe Avocado Fries

Avocado Fries are quick and easy which is a plus but you do have to dehydrate them for about 6 hours. To get them ready for the dehydrator only takes about 10 minutes if that. I did find them very rich so I could eat very many but the taste and texture was yummy! Next time I have a raw burger, I will be making raw avocado fries with a raw ketchup too!

Avocado Fries
For two avocados you will need about

1/2 cup golden flax seeds, ground
1/8 tsp cayenne
1/4 tsp cumin
1/4 tsp salt
1 tbsp chili powder

Mix breading throughly. Slice your avocados into strips and coat a few at a time covering each strip and place on dehydrator tray and dehydrate for 6 hours.
