Falafel and Hummus Wrap with Mediterranean “Roasted” Vegetables

Raw Food Recipes Course

For the tortilla
3 cups peeled courgette (zucchini)
3 tablespoons olive oil
2 teaspoons lemon juice
Pinch cayenne
1 teaspoon ground coriander
1/2 teaspoon salt
1/2 cup flax meal*
- Blend all ingredients in a high-speed blender until smooth.
- Add flax meal and blend again until smooth.
- Pour mixture onto 2 dehydrator sheets and spread evenly into a circle on each.
- Dehydrate for 8 hours at 105 degrees F, or until able to peel of the sheet.
- Once the dehydrator sheets are removed, return to the dehydrator for 30 – 60 mins, until both sides are dry to the touch but still pliable.
* Flax meal is flax seed that have been ground in a coffee grinder or similar, to produce a fine flour.

For the falafel
1 cup pumpkin seeds
2 tablespoons fresh dill, finely chopped
1 teaspoon ground coriander
2 teaspoons cumin
8 sun-dried tomato halves, soaked for 1 to 2 hours and then chopped
3 tablespoons fresh coriander (cilantro)
1 clove garlic
2 shallots
1/4 cup olives, stones removed
2 teaspoons oregano
Pinch cayenne
Pinch pepper
1/2 teaspoon salt
1 tablespoon lemon juice
- Process all ingredients in a food processor until thoroughly mixed.
- Form into Falafel and dehydrate on a Paraflexx sheet at 105 degrees F for 6 – 8 hours.

For the hummus
1/2 cup mac nuts
3 tablespoons lemon juice
3 tablespoons tahini
1/4 teaspoon salt
1/4 cup water
- Blend all ingredients in a high-power blender until smooth.

Optional “roasted” Mediterranean vegetables
1/2 cup courgette (zucchini), sliced
1 red bell pepper, sliced thin
1/2 a medium red onion, sliced
1/2 cup fresh tomatoes, sliced
3 tablespoons olive oil
1 tablespoon lemon juice
1/4 teaspoon salt
- Marinate all ingredients for a couple of hours, then place on a dehydrator sheet and dehydrate at 105 degrees F for 1-2 hours, until soft.
- You could just miss out the marinating & dehydrating part of this recipe to save time, and eat the veg crispy.

To assemble
- Start by arranging a selection of your favourite salad leaves at the bottom of the tortilla, so it covers half the tortilla, leaving a small gap at the bottom.
- Arrange the vegetables in a line along the salad leaves.
- Place 3 – 4 falafel along the top of the vegetables.
- On top of the falafel, spoon over a generous helping of the hummus.
- Fold up the left and right hand sides of the tortilla.
- The bring the bottom of the tortilla up over the 2 sides that have already been folded up.
- Using your thumbs, and keeping the sides and bottom rolled up, roll over the main part of the wrap towards the top so it starts to form the wrap and keep everything tightly packed together.
- Once completely rolled, cut at a diagonal with a sharp knife.

Carob and Strawberry Chia Buckwheat Breakfast


Raw Diet Recipes
This easy vegan recipe with chia seeds that have a boat load of nutrients! Omega 3 is much needed!
I keep a large jar in my pantry of soaked and dehydrated buckwheat ready to add to recipes. It's always nice to have these pantry staples ready. It makes preparing these wonderful recipes when were prepared.

Ingredients
2 T chia seeds
1/3 c. almond milk
1/2 t carob powder
1/4 t Fruits of the Earth (optional) 
Small handful of buckwheat, soaked, well rinsed and dehydrated overnight
3-4 strawberries, sliced

Directions
Soak the chia seeds in almond milk and carob (whisked in), along with some Fruits of the Earth if you are using it. After about 10 minutes, stir in some buckwheat groats and top with strawberry. Add a dusting of carob for color and added flavor.

2012 Health and Healing Crusade


A thousand or more will gather at Lodi’s Grape Festival Grounds for Modern Manna’s 14thAnnual Health & Healing Crusade on June 15–17, 2012. The Crusade will start Friday at 1 p.m. This year’s event will feature Charlotte Gerson, Dr, Robert Young, Shelley Young, Pastor Nathan Renner, Christian Berdahl, and Danny & Charmaine Vierra 
Charlotte Gerson is renowned for her work with the Gerson Therapy. She will be sharing her knowledge and wisdom at the ripe age of nienty. 
This year’s event will also include Dr, Robert Young, who has been widely recognized as one of the top research scientists in the world; Shelley Young, talks about acidic diets and their relationship to the epidemic of various diseases; Nathan Renner, is the pastor of the Sonora SDA Church; Danny Vierra, director of BellaVita Lifestyle Center; Charmaine Vierra, instructor of the CHIP program and PCRM’s Food for Life Program; and Christian Berdahl, who is a international singer and speaker and is known for his rich, powerful voice and stirring, Biblical messages. There will be live food and green smoothie demos along with cleansing recipes for detoxification. Children and youth programs daily.

Growing Radish Micro Greens Tribest Freshlife Sprouter





I don't know about you but I love micro greens. Radish they say is the easiest and I love radish sprouts. Very quick to grow and in the Freshlife Spouter buy Tribest it makes it very easy to grow them especially for beginners or busy people and who isn't busy these days.

I harvested the sprouts twice and cut off the bottom roots and laid them in a container lined with paper towels. They keep very well that way.

Then I add them to anything I would want sprouts on. I even make this simple avocado micro green salad. Mash your avocado and toss with sprouts. Season with pink salt and spices of your choice. Simple yet full of flavor. You could add to this simple easy salad or leave it like this. Use your imagination.

Broccoli in Hoisini Sauce with Parsnip “Rice” Russell James

This is what I had for lunch today. I revised a few ingredients. It's easy and divine!

Serves 1 – 2 people
5c (500g/1.2lb) small broccoli florets
2 tablespoons lemon juice
3 tablespoons olive oil
1 tablespoon tamari
- Mix all ingredients together a in large bowl and massage with your hands until the broccoli becomes softer, then leave to stand for 10 minutes.
- Transfer the broccoli to a non-stick dehydrator tray and dehydrate for 4 hours at 105 degrees F. You may find it useful (but not essential) to turn the tray around halfway through as the broccoli closest to the fan will dry quicker.

For the sauce
1/4 cup tahini
1 teaspoon lemon juice
1 teaspoon yacon syrup or agave
1 teaspoon apple cider vinegar
3 teaspoons tamari
1/2 a garlic clove
1/2 a small de-seeded chili
1/2cm cube of fresh ginger
- Blend all ingredients in a high-speed blender.
- Mix with dehydrated broccoli when ready to serve
- Serve with the parsnip “rice”

For the parsnip “rice”
1.5 cups (275g/10oz) peeled parsnips
1.5 tablespoons pine nuts
1 tablespoon macadamia nuts
1 tablespoon light miso
1 tablespoon cold-pressed sesame oil
3 spring onions, finely chopped
- Grind all ingredients, except the spring onions, in a food processor until fluffy and rice-like.
- Transfer to a bowl and stir in the chopped spring onions
