Raw Food Recipe Spanish Rice















Here is a nice raw recipe for spicy "Spanish Rice." Debbie came up with this recipe and it's great! I love to try new raw vegan recipes.

1 head cauliflower (shredded)
1 red bell pepper
5 green onions, sliced thinly
2 Roma tomatoes, chopped
1 recipe of Spanish Avo Mix

Spanish Avo Mix
In a bowl mash 1 avocado
Add: 1 lime, juiced
1 TB basil
1 TB paprika
1/2 tsp garlic powder
1/2 TB Agave or something sweet
1 red hot pepper (I used a jalapeno)*
1 tsp salt
1 garlic clove crushed
1/2 tsp onion powder
1/4 tsp cumin

Take your cauliflower and process in food processor until finely chopped to resemble rice.
Mix and toss with cauliflower Spanish Rice. I took a huge handful of sunflower sprouts and mixed in it too.
*I used a garlic press to mince the jalapeno pepper. Trying to chop hot peppers is hard to get small pieces. A garlic press minces it and helps it's flavor get distributed all through out the dish and if you have ever chopped hot peppers before you know to be very careful even wear gloves if you can because hours later you could see be having burning sensations on your hands and eyes. Mincing makes less handling.
When I do this recipe again I will use 2 peppers.
